Week 4 – Crispy Chicken Sliders with Dill Pickle Slaw

Happy Sunday Football Fans!

This week is a good NFL Eats week… these sliders have become one of my favourites! I am a big fan of dill pickles… so when I started making this Coleslaw it was to go as a side to Burgers… then i started topping it on pulled pork and then I though… what about on a Crispy Chicken sandwich… and well its definitely the best out of the 3!

These really are a TOUCH DOWN!

Week Four – Crispy Chicken Sliders
with Dill Pickle Slaw

Ingredients:
  • 2 boneless chicken breasts sliced in half and then in quarters (4 pieces per breast)
  • 8 slider buns
  • 5-6 Dill pickles sliced
  • 8 slices of cooked Thick Cut Bacon
  • 1 cup Buttermilk
  • 2 ½ cups AP Flour
  • 1 tsp each Salt & Pepper (Separated)
  • 1 tsp Paprika
  • ½ tsp Cayenne pepper
  • 1 tsp Garlic flakes
  • ½ cup Bread Crumbs
  • ½ cup Shredded Cheddar
  • Canola Oil

Dill Pickle Slaw

  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • ½ tsp Sugar
  • 2 tsp Dill (fresh or dried)
  • 1 tsp Chives (fresh or dried)
  • ¼ cup Pickle Juice
  • 2 heaping tbsp Sour Cream
  • ¼ cup Buttermilk
  • ½ package Coleslaw mix
  • 5-6 Pickles diced
  • ½ cup Red onion diced
Instructions:
  1. Prepare 3 bowls:
    • Bowl 1= 1 cup AP flour ½ tsp each of Salt & Pepper
    • Bowl 2 = 1 cup butter milk
    • Bowl 3 = Remainder Flour, S&P, Paprika, Cayenne pepper, garlic flakes, bread crumbs and shredder cheese
  2. Prepare Slaw and Slaw Sauce (Do not combine yet)
  3. In a cast iron skillet fill half way up with canola oil turn heat on high
  4. Dread chicken in Bowl 1, shake off excess, then into Bowl 2, shake off excess, and into Bowl 3
  5. Do this for each chicken slice and when the oil is HOT, carefully place your chicken into the oil
  6. Cook for 3-5 minutes one side (want golden brown crispy look) and flip for another 3-5 minutes
     
    * cook 4 pieces at a time, do not over crowd the pan when frying
  7. Place on paper towel and cover with tin foil in a warmed oven (preheated @200 degrees and then turned off) until all chicken is cooked
  8. Combine ½ of your sauce with your slaw mix, and the remainder of the sauce is to go on the buns for added sauciness!
  9. Build your sandwiches = bun, sauce, bacon, chicken, slaw, sauce, bun

Makes 8 sliders *Messy but delicious!
