Week Fourteen
Whiskey Bacon, Mac & Cheese
OMG…my mouth waters when I look at this picture… the cheesy gooey goodness and then that crispy BBQ sauced bacon….. omg… you guys! this is SO GOOOOOOOOD!!!
Seriously one for the books! super easy to make as well!

Here are the Roster details for this weeks Line up!
Ingredients
- 1 ½ packages of Bacon
- ½ cup of BBQ sauce (see Week 12 for Whiskey BBQ recipe)
- ½ of a box of macaroni
- 4 ½ cups of water
- Salt (for the water) + 1/8 tsp salt
- 4 tbsp butter + 1/8 cup melted butter
- 4 tbsp flour
- 2 cloves garlic diced finely
- ¼ cup Spanish white onion diced finely
- 3 cups of milk
- 1 tbsp mustard powder
- 1/8 tsp pepper
- 1 bag of shredded cheese (Mild & Old cheddar mix)
- ¼ cup panko crumbs
- 1 tbsp parsley
- ¼ cup Italian breadcrumbs
- ½ cup Grated Parmesan
Instructions:
- Bake bacon with BBQ sauce in the oven for 30-40 minutes @ 400 (you want crispy bacon)
- Cook pasta as directed on the box (salt the water – it should taste like the sea) and drain
- In a large saucepan, on medium-high heat, add onions, garlic, and butter and let cook down for about 3-4 minutes
- Add flour to make the rue
- Add milk and stir until the milk and rue combine
- Add in mustard powder, salt (1/8 tsp), and pepper – whisk until combined
- Mix sauce until thickened about 5-7 minutes – whisking generously the entire time
- Turn off the heat and add your cheese until combined and sauce is thick and cheesy
- stir in all but ½ cup bacon into the sauce
- Add cooked macaroni and mix well, move to a 9 x 13 pan
- In a separate bowl mix 1/8 cup of melted butter with panko crumbs, breadcrumbs, and parsley
- Add the crumb mixture to the top of your macaroni
- Top with grated parmesan and remaining ½ cup bacon
- Bake in the oven for 25-30 minutes @ 350 degrees

Pick Tip – Trust your gut. you can read all the stats, all the spread info, you can watch the injury report, and push through your fantasy picks based on predictions but at the end of the day, where I make my best decisions, is through my gut. Sometimes my gut is wrong, but the fact of the matter is – I watch enough football to sit here and say I can trust my gut. Like today…. the Bangels are 1-11 playing the Browns today haha I picked CIN. I have a gut feeling Dalton is wanting that second win! we will find out if my gut is right 😛
