Week Twelve
2 Style Chicken Wings & Chicken Tenders with Sauce
Good Morning Football Fans! Today is extra special as we have a ton of NFL games and GREY CUP! We are almost ready for kickoff here for our first round of 11 am games 🙂 I love Sundays. I really do love me some football! Anyways this week we have homemade chicken wings and chicken fingers! Who doesn’t love wings and ball! Anyways we have 2 types of wing sauces and a crazy twist on a chicken tender and dip!

Here are the Roster details for this weeks Line up!
Whiskey BBQ sauce Ingredients:
- 1tbsp EVOO
- ¼ of a Spanish onion diced
- 4 fat garlic cloves
- 1 chipotle pepper in adobe sauce
- ¼ tsp each Salt & pepper
- 1 tbsp honey
- ¾ cup Jack Daniels Whiskey
- 1/3 cup Apple cider vinegar
- 1/8 cup Worcestershire sauce
- 2 cups brown sugar
- 2 cups ketchup
- 1 tsp mesquite liquid smoke
2 tbsp tomato paste
- 1 tsp Red chili paste
Chicken Fingers Ingredients:
- 2 packages of chicken filets
- ½ bag Spicy Doritos
- ½ bag Sonic Sour Cream Doritos
- ½ cup panko crumbs
- ½ cup Italian bread crumbs
- 1 cup milk
- 1 cup Baking powder
- Salt & Pepper
Baked Crispy Chicken Wings Ingredients:
- 2 pounds of Chicken wings (skin on)
- Baking powder
- Salt & pepper
Honey Dill sauce Ingredients:
- ¼ cup Honey
- 1 tsp dill
- 1 tbsp mayo
Spicy Ranch Dipper Ingredients:
- 3/4 cup mayo
- 3 tbsp Sour cream
- Ranch mix (onion, garlic, dill, thyme, and parsley)
- 1 tbsp Chipotle in abode sauce
- Juice of ½ lime
- Salt & pepper
Instructions:
- Make your BBQ sauce – mix all ingredients (in order as listed) in a pot and cook down for about 40-50 minutes on simmer.
- Turn off let cool for about 20 minutes, then use a hand mixer to smooth out the sauce
- Let cool until ready to serve (Makes 2 mason jars)
- Dry your chicken wings and remove your chicken filets from the package
- Mix together the Doritos and bread crumbs for your chicken fingers in a food processor until crumbles
- Turn your oven on to 425 on the convection setting
- Once your chicken wings are dry, coat in baking powder and salt & pepper and layout on a greased cooling rack over a lined baking sheet
- Put your chicken wings in the oven (middle rack)
- Build assembly line for your chicken tenders – 1 bowl = baking powder, Salt & pepper, 1 bowl = milk, and 1 bowl = Dorito coating mix
- Dip chicken filets in baking powder, then milk, then coat in Doritos and lay on a greased lined baking sheet and put in the oven
- The chicken wings will take about 40 minutes and the chicken fingers about 25-30 minutes
- Mix together your Honey dill ingredients for your other Wing Sauce
- Mix together all Spicy Ranch ingredients for your chicken tender dip
- Remove your wings and tenders from the oven let cool, about 4-5 minutes and serve!
Tips*
- Baking powder on chicken wings makes the Skin SUPER crispy
- Convection setting on your oven is awesome for cooking meat because the fan circulates the heat around the meat for a more even cook!
