Week Eleven
Stuffed Potato Skins
Good Morning Football Fans! Happy Gameday Sunday! This week better bring me better luck than the last 2 weeks. This week we have a very easy game day snack that is always a winner. Potato skins are delicious but why waste all the filling when you can load it with bacon and cheese and put it right back in that skin and devour a creamy cheese potato!! haha ok, I am most likely making you hungry – so I will shut up now and post the recipe!
Here are the Roster details for this weeks Line up!
Ingredients
- 6 large russet potatoes
- EVOO
- 1 tsp Garlic powder
- 1 tsp each salt & pepper
- 3 tbsp Butter
- 2 tbsp sour cream
- ½ cup Crispy bacon pieces
- ¼ cup diced Chives
- 1 package Fine herbs Boursin cheese
- 2 cups Old cheddar
Instructions:
- Wash your potatoes well and make sure they are dry
- Preheat oven to 425 degrees and line a large baking sheet with parchment paper
- Brush oil on the outside of the potatoes and sprinkle with salt, pepper and garlic powder
- Bake for 35-40 minutes
- Remove from oven and let rest – you want them cooler so you can cut them in half easier
- Turn oven down to 400
- Once cooled, with a sharp knife cut your potatoes in half
- Scoop out the middle (leave about a cm around the ends) and place in a bowl
- Add butter and sour cream and mash the potatoes (I left mine a little lumpy)
- Add chives, bacon, Boursin, and ½ cup of cheddar to the mashed potatoes and mix
- Scoop mixture into potato shells (heaping spoonful’s)
- The remaining Cheddar cheese goes on the top of the potato mixture
- Bake at 400 for about 18-20 minutes
- Garnish with more bacon and chives if desired and serve

Week 11 – November 17
I am not gonna share my picks this week since I have fallen a little short the last 2 weeks, but I will say I expect New England and San Fran to be fired up to come back from their losses!
