Week 10 – Spinach Dip

Week 10 – Spinach Dip – A play on the Kelsey’s version

If you have no Idea what Kelsey’s is… it’s a Restaurant that makes a really great spinach dip… and I believe I have come pretty dang close to the recipe on it 🙂

Ingredients:

  • 1 8oz Cheese Cream block
  • ½ red pepper diced
  • ¼ cup Green onions diced
  • ½ container of frozen spinach thawed and squeezed dry
  • 3 gloves Garlic minced
  • ¼ cup grated Parmesan
  • ½ cup Cracker Barrel Italiano Cheese Mix
  •  1 cup Shredded Cheddar Cheese
  • 1/8 tsp Cayenne powder

Instructions:

  1. Preheat the Oven to 400 degrees
  2. Use an oven safe bowl or a small cast iron skillet
  3. In a stand mixer, mix cream cheese, garlic, parmesan, and Italiano cheese mix until combined
  4. Add spinach and mix on low until incorporated
  5. Add in Red pepper and green onions and stir into mixture *do not use mixer for this step
  6. Move mixture to your oven safe bowl/skillet and top with Cheddar cheese
  7. Sprinkle cayenne powder over the cheese
  8. Bake for 18-20 minutes until cheese is melted on top and small bubbling is happening around the edges
  9. Let set for 3 minutes, serve with Tostitos and Pitas
