Week 10 – Spinach Dip – A play on the Kelsey’s version

If you have no Idea what Kelsey’s is… it’s a Restaurant that makes a really great spinach dip… and I believe I have come pretty dang close to the recipe on it 🙂
Ingredients:
- 1 8oz Cheese Cream block
- ½ red pepper diced
- ¼ cup Green onions diced
- ½ container of frozen spinach thawed and squeezed dry
- 3 gloves Garlic minced
- ¼ cup grated Parmesan
- ½ cup Cracker Barrel Italiano Cheese Mix
- 1 cup Shredded Cheddar Cheese
- 1/8 tsp Cayenne powder
Instructions:
- Preheat the Oven to 400 degrees
- Use an oven safe bowl or a small cast iron skillet
- In a stand mixer, mix cream cheese, garlic, parmesan, and Italiano cheese mix until combined
- Add spinach and mix on low until incorporated
- Add in Red pepper and green onions and stir into mixture *do not use mixer for this step
- Move mixture to your oven safe bowl/skillet and top with Cheddar cheese
- Sprinkle cayenne powder over the cheese
- Bake for 18-20 minutes until cheese is melted on top and small bubbling is happening around the edges
- Let set for 3 minutes, serve with Tostitos and Pitas
