Week 9 – Baked Jalapeno Cheese Sticks

Hi There, its me… the delinquent one! 😦 I apologize to my avid fans out there, It has been a crazy few weeks for me. As I have expressed 2020 has been alllllll about work for me, which I am blessed to have been so busy this year… but, I find I am too tired or exhausted and I am also trying to work on some Christmas gifts that I am making for my Family… so I have been a busy bee lately… however I have been at least making Sundays Game day snacks just not gotten to post them yet!
so with out FURTHER ado… Bites by Brittany presents…
Week 9 – Baked Jalapeno Cheese Sticks
Ingredients:
- 1 block of Monterey Jack Cheese cut into 20 pieces
- 4 eggs whisked
- 1 bag Cool Rach Doritos
- 1 bag Jalapeno Cheddar Doritos
Instructions:
- In food Processor or in a bag with a rolling pin, crush your chips together until they are small crumbs
- Set up your station cheese sticks, egg mixture, Doritos crumbs
- Take your cut cheese sticks and put one at time into the egg mixture
- Move right into the Doritos and coat well
- Go back to the egg mixture and drop your coated cheese stick until coated and back into the Doritos again (this needs to be done fairly quickly so you don’t take off all your 1st coating)
*Double coating is necessary!! - Once coated and the cheese is fully covered place on a lined baking sheet
- Once all pieces are done – put them in the freezer for 30 minutes!
- Preheat over to 400 degrees
- Once ready from the freezer, spray with cooking oil *PAM* and right into the oven for 8-10 minutes (until the cheese starts to melt out)
- Let cool 2 minutes and then plate and enjoy

So mine turned out a little more gooey because I did not do a full 30 minutes in the freezer, I did 20 minutes so do keep them in the freezer for a real 30 minutes so the outside cooks and the cheese melts a little slower 🙂
This one is fun and delicious.. and rather easy!
Feel free to flip out the Dorito Flavours… or try any CHIP really…. it would be UNREAL!
Sweet Chili Heat would be awesome with this cheese or the Ruffles Flamin Hot Cheddar and Sour Cream with mozzarella… that would be awesome too!
