Jerk Pulled Pork & Tequila Slaw Sliders

Omg… This one is unreal you guys! Honestly one of my favorites right here! The first time I did jerk pulled pork was for my friends Toni & Robbie for their Housewarming Party I catered last Summer… and this coleslaw of mine…. well it been a work in progress, finding the right Tequila and so on…. but it is so DELICIOUS!!! You are gonna love this one.

Here are the Roster details for this weeks Line up!

Ingredients

  • Dozen White Buns
  • 4lb Pork Shoulder
  • Limes
  • Jerk Seasoning:
    • 2 Tsp Onion Powder
    • 1 tbsp Garlic Powder
    • 2 tsp Cayenne Pepper
    • 1tsp Red Chili Flakes
    • 2 tsp thyme
    • 1 tsp Paprika
    • 2 tsp Parsley
    • 1 tsp White Sugar
    • 1 tsp (packed) Brown Sugar
    • ½ tsp Black Pepper
    • 1 tbsp salt
    • IMG_2054½ tsp Cinnamon
    • 1 tsp Allspice
    • ½ Tsp Nutmeg
  • Caribbean Tequila Coleslaw
    • 1 bag Cole slaw mix (the normal size not the BIG)
    • Bunch of Cilantro chopped
    • 1 large Red Pepper chopped
    • 1 bunch of green opinion chopped
    • 2 mangos chopped into chunks
    • The Sauce
      • ¼ cup Mayo
      • Juice of ½ of a Lime
      • 1 tbsp Tequila (Espolon – Puro Agave is what I used)IMG_2056
      • 1 tsp white sugar
      • 1 tsp packed Brown sugar
      • ¼ tsp Salt & pepper
      • 1 tsp jerk seasoning
      • 1 tbsp EVOO

What to do:

  1. Mix Jerk Seasoning together in a bowl
  2. Rub down Pork Shoulder with seasoning until completed covered (I keep the twin on until it is cooked to hold in all the juice)
  3. Place pork (fat side up) in a crockpot on high temp for 6-8 hours (I usually let mine go overnight)
  4. Mix together all dry ingredients of your Slaw and put aside in the fridge
  5. Mix your wet ingredients of the Slaw in another bowl and set aside *Tip – add the sauce once you are ready to eat so it doesn’t get to wet
  6. Once your pork is cooked, remove the fat from the top layer, and then start pulling your pork apart
  7. Mix Coleslaw, cut buns in half and tell your crew to come serve ‘em selves!
  8. Limes for added citrus should they want it 😊
