Week Four
Beer Battered Fish Tacos with Slaw
Week 4 – woot woot!! ok so I ran out of tequila and I decided this didn’t need it, but I will share my Tequila Slaw Recipe soon 🙂
Anyways – this weekend should be a good weekend of Ball. week 4 is always a good week to start seeing big teams stand out! So I am looking forward to watching my team hit 4-0 this weekend 🙂

Here are the Roster details for this weeks Line up!
What you need:
- 8 Tortillas
- ¼ cup Cilantro chopped
- 1 Avocado sliced
- 2 Limes quartered
- Canola Oil (3 L jug)
The Slaw:
- 1 cup coleslaw mix
- 1 fat tbsp Mayo
- 1 fat tbsp Sour cream
- 1 small Jalapeno diced
- Juice of ½ Lime
- Hot sauce (a few dashes)
- Fat tbsp of chopped Cilantro
The Beer Battered Fish:
- 8 3inch pieces of cod (I used frozen) cut in 2 (16 pieces)
- 1 Tbsp + 1 tsp Salt (separated)
- 1 cup + 1 tbsp Flour (Separated)
- 1 tbsp Garlic powder
- ¼ cup Cornstarch
- 1 Tsp Pepper
- ½ tsp Dried cilantro
- ¾ of a Beer – Tecate (Mexican import)
- ½ of a Lime
- Hot Sauce (a few dashes)
What to do:
- Dry your fish! This is an important step. Let the fish dry well on some paper towel
- Turn oven on to 425 to preheat
- Mix SLAW ingredients and set aside in the fridge until ready to eat
- Cut up avocado, cilantro, and limes set aside
- Put Oil in a large Pot and turn on high (keep a lid on for now)
- Mix the ingredients for the batter, first dry, then add in the wet, beer last.
- Make sure you slowly incorporate the beer – your batter should be thick but smooth
- Once your oil is hot enough (test with a little batter into the oil – you want it to immediately start to bubble) Add SALT (1 tsp) & Flour (I tbsp) to cod and drop them into the batter (in shifts so you do not crowd the batter or oil)
- Let the excess batter drip back into the bowl, and then slowly slide the fish into the oil – let cook for about 3-5 minutes (Gold Brown)
- Set fish on a baking sheet – once they are all fried, toss them in the oven for 4/5 minutes to just crisp up that skin a little more (worth it, I promise)
- In a clean kitchen towel, put your tortillas in the microwave for 40 seconds… then SERVE EM UP
