Week One 

Cheese Chicken and Black Bean Nacho Dip 

YYYYEEEEESSSSSS!!!! 

Here are the Roster details for this weeks Line up!

Get it… ingredients…roster – HAHAHA!!! – I am so CHEESY!!! … oops I did it again 😉 – Enjoy My Football Family!

Servers 6-8

  • Tostitos (Blue corn & Reg)
  • 2 cups Pulled chicken
  • 1 can Black Beans
  • ¼ cup Red onion diced
  • ½ cup Tomatoes diced
  • 1 can green chilies  
  • Juice of 1 Lime
  • 2 fat Garlic cloves diced
  • EVOO
    • Optional – Cilantro
    • Optional – Pickled Jalapenos
    • Optional – diced Fresh Jalapenos

Cheese sauce:

  • 1 ½ cup Monterey Jack + ½ cup for top
  • 1 ½ cup Cheddar + ½ cup for top
  • 2 cup Whipping cream
  • ¼ tsp Paprika
  • ¼ tsp Chili powder
  • 2 tbsp butter
  • 1 tbsp Flour
  • Salt & Pepper to taste
  • Splash of Hot Sauce (I used Valentina Hot Sauce)

Instructions:

  1. In a medium-high cast iron pan with the oil – add your garlic and onions
  2. In a Pot start to melt down your butter
  3. Once your butter is melted add your flour, paprika & Chili Powder and stir to make a rue
  4. Add the Whipping cream to the rue and mix well
  5. Back in the pan, you can add your chicken, lime juice, and black beans (you are just heating everything up and cooking down the garlic and onion for flavour)
  6. Your sauce will be starting to thicken so add in your hot sauce, salt & pepper and both kinds of cheese – mix until combined and smoothed
  7. Turn your heat off on your pan and cheese sauce – and cheese sauce into veggies and mix
  8. Add Tomatoes, Green chilies – mix slightly
  9. Top with remaining ½ cups of cheese and toss into a 450 Degree oven for 5 minutes
  10. Toss the Oven on broil for 1-2 minutes until cheese bubbles on top
  11. Add your optional toppers & let sit and cool for 5 minutes before serving
