My version of a Buddha Bowl

Happy Sunday Friends! Hope ya’ll are enjoying a great day of good football!

On this weeks episode of BitesbyBrittany…we are talking… The “Buddha Bowl”!!

There are some delicious versions of “Buddha Bowls” out there.

If you don’t know what a Buddha bowl is… it’s a new food trend that seems to be taking over the healthier option side of things. The Buddha bowl is supposed to be a healthier option, and you can find something like this at Freshii’s and some chain restaurants are now adding similar items to their menus.
We can turn burritos into bowls, we can turn sushi into bowls, we can turn tacos into bowls… it is basically the deconstruction of another dish.
I have had ahi tuna, mango and edamame with a spicy aioli sauce over rice that blew my mind at Cactus Club once, so I thought why not attempt to make something similar at home.  So one day I looked in my fridge and saw my homemade peanut sauce and I figured that would work for my first Buddha Bowl.

Here is my 1st version of a Buddha Bowl:

Ingredients

  • BBQ Grilled Chicken (marinated in peanut sauce)
  • Lettuce
  • Cauliflower rice or Brown Rice
  • Orange Bell peppers
  • Cucumber
  • Green Onions
  • Cilantro
  • Chopped Peanuts
  • Peanut sauce (Store bought is fine)
  • Sesame seeds
  • Lime wedge

 

There is not a lot of directions on this, cut everything up and put it out on the table for everyone to dress their own bowls, it’s not only easy and quick but its also interactive and Healthy!

 

I am still working on perfecting my Peanut Sauce, but It will be something I will Share with you soon!
