Pizza My Heart

Good Morning, Good Morning…from Sunny warm Calgary!…. JUST KIDDING!!! its -20 something and feelin like -30 and its cloudy and snowy and BLAH! But I have Coffee and Oliver to keep me warm! So it still remains a good morning despite the dang weather!

Topic of the Day:  P-I-Z-Z-A!!! 

I can’t think of one person I know, who doesn’t like Pizza! Pizza is so diverse. You can put just about anything on a piece of dough and Voila! you got Pizza! also now, you have so much Crust option: Thin crust, Thick crust, Stuffed Crust, Whole wheat, Gluten free, or even just adding spices or garlic to a crust….sooooo many options for pizza now.

It makes my Heart SIIINNGGG!!!

Pizza was one of my first words and also one of the first I could Spell (my family used to spell it so I didn’t get excited LMAO). My parents didn’t order it as often as I wanted, but when I did get it on busy nights or weekend fun, it was usually Theo’s or Tops pizza! Theo’s Special combination pizza is ridiculous – PS!

SHOUT OUT….

For my non-Orillia friends & followers: If you’re ever in Orillia Ontario stop in at Theo’s Eatery on Memorial Ave… it’s the best damn place to eat in the whole Town! I worked there for 5 years… and I ate there a lot. Practically everything off that menu! Tell them I sent you in for the Pizza or really eat whatever you desire… Everything is DELICIOUS!!  Below is a Link to their website Menu! I used to come home smelling of Theo’s – sometimes I’d smell so good my parents would then order a pizza! HAHA!! I swear to the food gods, that I have not come across too many places that can make Pasta as good as these guys!

anyways… back on track…..

Pizza is the universal friend food. Think about it… when you and the crew (who still says crew LOL) are out having a Party night what is the first thing on every ones mind when they leave the bar or the club….. PIZZA!! Literally just did that a couple of weeks ago for Janelle’s 30th! 2:30 am and we order friggin pizza! I will say it is also a great family night meal, or a quick grab on the way home from a busy long 12 hour day at work…. So naturally since I have a past and a present obsession with Pizza, it only makes sense that I have been working on making my own! I’m not going to post the pizza crust recipe yet because I haven’t perfected it yet, this is my pizza for the future!
up first is…..

Bacon. Cheeseburger. Pizza!

What you need:

  • 1 pkg of pizza crust (or homemade dough – I did a whole wheat thin crust)
  • 1/2 pound cooked ground beef (I used my skillet and cooked little mini burgers and then broke them up into chunks) *Leftover burgers from the night before would work too, just chop em up
  • 6 strips of cooked Bacon
  • 1/4 cup diced white onions
  • sliced Pickles to your liking
  • Burger Sauce:
    • 1/4 cup ketchup
    • 1/4 cup mustard
    • 1/2 cup mayo
    • 1/4 cup relish (I used my grandma’s homemade stuff)
    • 1 tsp onion powder
    • 1 tsp paprika
    • 1 tsp garlic powder
    • Salt & Pepper to taste
  • 1 & 1/2 cups Marble Cheese (you can use less or more and whatever cheese you want – Sharp Cheddar would be good)
  • 1/8 cup cornmeal for the base (its important for a great crust)

What to do:

  • preheat oven to 425 degrees
  • roll out your dough to shape
  • build your sauce and cut up any ingredients
  • sprinkle your pizza pan or pizza stone with cornmeal
  • place dough on the “cornmealed” pizza stone/pan
  • next goes down your sauce (save a little for a few dollops)
  •  next goes the burger meat and onions
  • now add the remaining dollops of sauce over the meat
  • cheese, bacon and pickles go on to top the pizza
  • cook for 12-15 minutes (could be 10-12 minutes on a pizza stone and all depends on your oven… you want a crispy edge and if you lift up the pizza you want it to be browned on the bottom and of course the cheese will be fully melted to perfection)
  • let your pizza rest 3-5 minutes before cutting it *Get a decent pizza cutter, I promise its worth it!

Spicy Perogy Pizza

(Yes like Boston Pizza)

What you need:

  • 1 pkg of pizza crust (or homemade dough – I did a whole wheat thin crust)
  • 12-20 mini coloured potatoes sliced thin (use mandolin) or use 2-5 regular sized potatoes (depends how thick you want it)
  • 1 Jalapeno cut into slices (optional)
  • 1/2 cup Green onions (2 1/4 cup portions)
  • 6 strips of cooked bacon
  • Spicy Sauce: (my version of Cactus dip from BPs)
    • 1 cup sour cream
    • 1/4 cup Renée’s Mighty Caesar Dressing (if you don’t have Renée’s use 1/2 cup of any other kind, Renée’s is just super strong you don’t need as much)
    • 2 heaping table spoons Parmesan cheese
    • 1/4 cup green onions (use 1 portion from above)
    • 1/2 – 1 tsp red chili flakes (your call… I did the 1 tsp)
    • 1/8 cup diced jalapeno (optional)
  • 1 & 1/2 cups Marble Cheese (you can use less or more and whatever cheese you want)
  • 1/8 cup cornmeal for the base (its important for a great crust)
  • Pam for the potatoes (or Oil)
  • salt & pepper

What to do:

  • preheat oven to 425 degrees
  • slice your potatoes and place them in a bowl of water for about 10 minutes – you want to pull out the starch (water will become cloudy)
  • drain the potatoes, and repeat the water bath for another 5 minutes
  • drain again, and place on a dry clean dish towel, the potatoes need to be complete dry before going in the oven
  • spray a baking sheet with Pam  or lightly oil the pan  place your potatoes on sheet in a single layer (do not over lap)
  • place in the oven for 8 minutes, take them out flip them and S& P the flipped side and place back in the oven for another 6-8 minutes (you want crispy edges but a soft middle)
  • remove when crispy edges occur and let rest
  • roll out your dough to shape
  • build your sauce and cut up any ingredients
  • sprinkle your pizza pan or pizza stone with cornmeal
  • place dough on the “cornmealed” pizza stone/pan
  • next goes down your sauce (about half or a little more, save some for dipping!)
  •  put cooked potatoes on next, overlap them and go as thick with layering as you wish
  • next goes cheese, bacon and jalapeno slices
  • cook for 12-15 minutes (could be 10-12 minutes on a pizza stone)
  • let your pizza rest 3-5 minutes before cutting it
  • sprinkle the remaining green onion on top of your finished pizza
  • and don’t forget your dipping sauce 🙂

So there you have it – two new pizza’s to add into your Pizza Nights! I have also attached at the bottom here Printable versions of these pizzas! You can now save the Word file or print it off for your cooking pleasure 🙂 Happy Pizza Night Friends!!
