Garlic + Cheese + Bread… These are a few of my favourite things.
Fun fact about Brittany… She watches a lot of cooking shows! I write down recipes and evolve them into my own. You don’t learn to cook unless you start learning somehow. This is one of those recipes. Kelsey Nixon has a TV show on the Cooking Channel and she made a garlic pesto split cheese bread. It looked insane and so delicious. So I thought I’d make my own!
What you need for my version:
- 1 loaf of asiago artisan bread (Kelsey used a sourdough- you can do this with a baguette or any loaf bread you choose)
- 1/2 ball of soft mozzarella cheese cut into thin slices
- 1/2 cup Romano cheese
- 1/8 cup Parmesan cheese
- 1/2 stick of butter
- 1 fat garlic cloves minced
- 3/4 cup Pesto Sauce
- Basil, Pine Nuts, Olive Oil, Salt, Garlic, Parmesan and Romano cheese — all blended together

What to do:
- Pre-heat the oven to 350 degrees
- cut the bread 3/4 of the way down into slices on one side and then on the other side to create 1 inch “bread sticks” that you will be able to pull apart later
- transfer your bread to your baking sheet lined with parchment paper or tin foil
- stuff your pesto down into the slices you just made
- next stuff your thinly slices Mozzarella cheese into the slices then sprinkle in and around your Romano and Parmesan cheese
- melt your butter in a small sauce pan over medium high heat – once melted add in your minced garlic – let this mix well for a minute then remove from heat
- drizzle the garlic butter all over your bread
- bake your bread in the oven for about 15 minutes or until cheese is melted
- eat immediately
This is sooo delicious!!!
Definitely not a every day kind of a thing because it is so cheesy!
Tips:
A few different ideas to make this your own …..it would be awesome done on the BBQ on a baguette cut into slices and stuffed … or make a red pepper pesto or a sun-dried tomato pesto – mix up your breads and your cheeses. Make a Jalapeno cream cheese mixture and toss that in, instead of a pesto. Make a little chili and stuff that down in the bread… really the options are endless.
