Caesar Salad Dressing….If your not a fan of Garlic… You may want to stay away from this one!

OK so Caesar salad is not a Date night meal!….Especially how we make it in my family.
This salad dressing could knock out Dracula in one sniff! So don’t lead with this if you plan on kissing anyone in the next 24 hours.

Garlic is my spirit animal! Seriously I love Garlic… its in just about everything I make! one little bulb of goodness can go a very long way in flavour! If I ever become a Vampire… its going to be a very hard struggle for me… I may be the only Vampire to ever die out of their love for Garlic…

This Salad Dressing is a family recipe… however each Family member seems to make it just a little bit different every generation it gets passed to. If we were to taste test my dressing against my mothers and my grandmothers — all 3 would be slightly different. Which is what makes this recipe so Great! there is variations and wiggle room to make it your own.

Here is what you need:

  • 3 Large Garlic Cloves
  • 1/2 cup EVOO
  • 1/2 tsp red wine vinegar
  • 1/2 tsp white wine vinegar
  • 2 Large Eggs (Boiled for 2 minutes)
  • 1 tbsp Mustard or Mustard Powder
  • 1 Tbsp Worcestershire Sauce
  • 1/2 cup Parmesan Cheese
  • Pinch S&P

All you do is add all of these ingredients to a bowl and use a Hand Mixer to break it all down into a Sauce.

The recipe does contain egg so it is something you want to make and use within a week or two. My Grandmother says she gets hers to last about 3 weeks if she uses a mason jar for storage!
This recipe will make a big salad for dinner and leftover dressing for lunches. Just make sure the dressing is stored in the fridge if you take it for Lunches!

Serve over Romaine and/or Kale with Croutons, Real Bacon pieces and Grilled Chicken.

Tip: Red Onion or Tomatoes are a nice mix in a Caesar salad as well!
