Winner Winner Chicken Dinner

This Chicken dinner is the bomb! So delicious and full of great flavours!

What you need

  • 1 boneless chicken breast
  • 2 cups baby red potatoes
  • 2 slices of Jalapeno Havarti ( do whatever cheese you want)
  • 1/4 cup Extra Virgin Olive Oil x2
  • 1/2 cup chucked red onion (same size as potatoes)
  • Sour Cream or Avocado crema
  • 2 slices jalapeno Havarti
  • 1/4 cup My Spicy Italian Spice Mix
  • 2 tsp My Half Baked Spice Mix
  • Cooking spray

What to do:

Cut the chicken breast into half (Butterfly)
place chicken into a large plastic bag and add *My spicy Italian Spice Mix and Olive Oil
Massage the oil and spices into the chicken and place in the fridge for an hour or more.
Cut potatoes into quarters and wash in cold water, dry and then place back into the colander and into the fridge until your ready for dinner. *this will make the potatoes nice a crispy but tender on the inside.
Preheat the oven to 350 and get out a baking tray
spray the pay with some cooking spray
add your potatoes the rest of the oil, red onions and *My Half Baked Spice Mix – toss together * use your hands – best tools you got!
add the chicken to the pan and put it in the oven for 20-25 minutes
remove chicken and potatoes from the oven, flip the chicken and the potatoes
add the cheese to the chicken and crank the heat up to 425 and put the pan back in the oven for 5 more minutes
remove, plate add your topping and enjoy 🙂


Tip: add in a Veggie of your choice, mix in with the potatoes (asparagus would be delicious or Broccoli) to complete the meal. Also, I made double the potatoes and will sue the extra for breakfast (these potatoes make delicious “Home fries”) – Heat em up – add a delicious running egg on top and add my Spicy Chipolte Ketchup* … so Delicious!

*My Spicy Italian Spice Mix
(Basil, Garlic Powder,Onion Flakes, Parsley, Rosemary, Thyme, Oregano, Salt & Pepper, Chili Flakes)
*My Halfed Baked Spice Mix (name is because it goes with any kind of potatoes-seriously)
(Garlic Powder, Garlic Flakes, Onion Flakes, Basil, Parsley, Thyme, Rosemary, Oregano, Salt & Pepper, Paprika)
