Good Morning my fellow Foodies 🙂
I hope everyone survived this week, it sounds like the universe had this week be atrocious for everyone. Good to know it wasn’t being specific LOL. It was also the coldest Calgary weather this week. Not sure if you read this, but apparently Calgary was colder then Antarctica this week! Just STUPID Weather… but the good news is, its almost over and we have PLUS degree weather next week!
Anyways sorry – I am getting off-topic, we are here to talk about FOOD! And specifically, my Crab Stuffed Mushrooms!
These are my sisters’ fav. She loves it when I make these. I have been playing around with the recipe on this for a while, and I think I have officially nailed it. It’s creamy and flavourful. These babies melt in your mouth. They are honestly the bomb!
Let me share how you can make these delicious mushrooms too!
Crab Stuffed Mushrooms
Filling Ingredients:
- 8 oz cream cheese
- 3 Garlic cloves minced or pressed
- 1 tbsp mayo
- 3 dashes Worcestershire sauce
- ½ lemon juiced
- Salt & pepper to taste (a pinch of each)
- ½ tsp Old Bay Seasoning
- ¼ cup finely dices Red Onion (Green onion is ok as well)
- ½ Red Pepper finely diced
- ½ package of Crabmeat
- 1 package cremini mushrooms (white would be fine too) remove stems
Crumble topping Ingredients:
- ¼ cup Panko Crumbs
- ¼ cup Bread crumbs
- 1 tbsp parsley
- 1 tbsp garlic flakes
- 1 tsp onion powder
- 1/2 tsp Old Bay Seasoning
- Salt & Pepper to taste (a pinch of each)
- 1/8 cup melted butter
Instructions:
- Preheat oven to 350 degrees
- Mix together the first 7 ingredients for your filling – Use a stand mixer or beaters – you want a smooth creamy mixture
- Add onions, red pepper, and crab meat and stir into your mixture
- Spoon mixture into cleaned mushrooms that are on a lined cooking sheet
- Mix together crumble ingredients (butter to go in last)
- Spoon crumble on top of the stuffed mushrooms
- Bake in the oven for 20-25 minutes – you want a browned crumble on top
- Let sit for 2 minutes before serving
Makes approx. 20 mushrooms
*Leftover mixture…. Try these fun options….
Seafood dip
- Add to a glass dish
- Cover with seafood sauce
- Eat with crackers
Stuffed Chicken
- Slice a pocket in a chicken breast at the meatiest side
- Stuff mixture inside the pocket
- Roll the chicken breast in the SAME crumble mixture (roll it in flour and egg first so it sticks)
- Bake at 375 for 25- 30 minutes until chicken is cooked all the way through
