Thai Chicken Slaw over Rice Noodles

I think the hardest part of blogging is the opening sentence… paragraph even. I usually end sitting in front of the computer and procrastinating for at least 30 minutes, because I am good at the food part, but not so much with the writing part! haha…

So…. needless to say, I just procrastinated and booked my friends and I our Paint Nite, and I sorted my emails, and even played with the font options on my website. LOL! So now this is why you are getting this Candid and very honest poorly written first paragraph! HA!

I also, have already failed at my new years resolution! Clearly didn’t get to post something last week. In all fairness, I  cooked lots and I have about 500 photos of things I have made and 3 recipe books that I write in…. but, the majority of those, are work in progress projects. These are recipes I have tried and are good, or things I have just tossed together but could use some work. It’s all part of the process of building your own recipes! So with that being said I am posting TWO recipes today! Both on the Healthier side of the Food World!

This first recipe that I am going to post is my new favourite Lunch Meal. Its pretty damn easy, and its prep time is so quick! The Longest part of this recipe is shaking the mason jar! We are going to call this one:

Thai Chicken Slaw over Rice Noodles

Its a spicy peanut sauce with shredded chicken and veggies over rice noodles. You eat this one cold! So it’s perfect for an work week lunch. You could even do this in Mason Jars if you want to be Trendy AF!

 

*please note that last picture… that is my pain in the @$$ cat, Oliver. However, even he wants to eat this one… so it must be good! #mycatthinkshesahuman

Here is what you need:IMG_7815

  • 2 cups Shredded chicken (2 leftover small chicken breasts, a small rotisserie chicken, whatever you got)
  • 1 bag Coleslaw mix (green cabbage, purple cabbage, carrots)
  • 1 red pepper Julienned and cut into halves
    Don’t know what I mean… Watch my friend Gord show you!
    How to Julienne a Red Pepper 
  • 1 cup chopped green onions
  • 2 carrots shredded
  • 1/2 bag of rice noodles cooked and cooled (follow the package instructions for cooking)

My version of Spicy Thai Peanut Sauce (make it in a jar)

  • 1/2 tsp grated ginger
  • 1 fat clove of garlic grated
  • the juice of one lime
  • 2 heaping spoonfuls of peanut butter + 1 tsp sesame oil
    Tip: Microwave for 20 seconds and stir before adding to the jar – it will activate the oils and incorporate easier
  • 1/4 cup soya sauce (low sodium if you can)
  • 1 tbsp rice wine vinegar
  • 1/2 – 1 tsp of red chili paste (depends how spicy you want it)
  • 2 tbsp hoisin sauce
  • 1 tbsp oyster sauce
  • 1/2 cup Vegetable/ Chick broth (whatever you got on hand, I used my homemade stuff)
  • pinch of S&P

Toppings:

  • Sesame seeds
  • Chopped peanuts
    (If you only have whole peanuts – toss ’em in a plastic baggy and use the base of a cup and give it a few wacks…just don’t make peanut butter or shatter the cup! HAHA!)
  • 1/4 cup finely chopped cilantro (optional)

 

What you do:

  1. Combine all sauce ingredients into a regular mason jar – tighten the lid and shake shake shake it off (haha I would quote TSwift)
    you want it well combined and if its too thick add more broth until its the texture you want (I like mine slightly thick)
  2. In a bowl combine coleslaw mix, shredded carrots, green onions and red peppers and toss to evenly mix
  3. In the base of your lunch containers put your rice noodles down
  4. Next add your coleslaw and veggie mix, shredded chicken, and whatever toppings you choose to add into the dish
  5. When its lunch time just add your sauce mix well and enjoy

makes about 5-7 servings
