These are sooooooooo delicious and EASY!
During my Catering gig, I had to come up with some dessert options and i was trying to keep the theme of Mexican night and I thought we should do a Taco… a Dessert taco….so I pulled out my Mexican cookbooks and did some internet searching and i came up with doing a Mexican style Cannoli!!! After a little experimenting and a lot of taste testers (Thank you friends!) I narrowed it down to the two best flavours!
- Lime Cheesecake filling wrapped in a Tajin spice(Mexican lime spice), cinnamon and sugar rolled tortilla
- Mexican Vanilla and White Chocolate cheesecake filling wrapped in a cinnamon and sugar rolled tortilla
The ladies I catered for said they were surprised at how delicious the Lime & Tajin one was, as it sounded like it would be too tart, but it by far the best one!
LIME & TAJIN TAQUITOS
Here is what you need:
- 15 flour tortillas
- 12 oz (1 & 1/2 packages) Cream cheese (softened – room temp)
- 1/2 cup sour cream
- 1 lime (zest and juice)
- 1 cup & 2 tbsp sugar
- 1/4 cup cinnamon
- 2 tsp Tajin Spice (found in the international isle at most grocery stores now)
- 1/2 cup melted butter
Here is what you do:
- Turn oven on to 350 degrees and get a baking sheet and a rack set up
- in a deep dish mix your cinnamon, Tajin spice & sugar(1 cup) together
- in a mixer, add your cream cheese, sour cream, sugar (2 tbsp), lime juice and zest until fluffy and smooth
- melt your butter and create a “breading” station with your tortillas, melted butter, rub dish, and the filling
- take a tortilla and add a heaping tbsp of filling towards one side of the tortilla, you will then roll your filling into the tortilla, you are creating a roll (a taquito or a flautas in Spanish) *TIP – use a little of the filling on the far edge to seal the rolled up tortilla
- Brush your tortilla roll with butter and begin rolling it in the cinnamon, Tajin and sugar mixture until fully coated
- place the taquito sealed side down on the rack on top of the baking sheet and repeat all steps until all 15 tortillas are done
- bake in the oven in the middle rack for 15-20 minutes or until browned and the tortillas are firm and the filling starts to expand out the ends
- let stand for 5 minutes serve with drizzled chocolate
(I let the ladies choose their chocolate sauces… I did salted Caramel, white and milk chocolate)
or - serve cold… these are good both warmed and or cold.
MEXICAN VANILLA & WHITE CHOCOLATE TAQUITOS
- 15 flour tortillas
- 12 oz (1 & 1/2 packages) Cream cheese (softened – room temp)
- 1/2 cup sour cream
- 2 tsp mexican Vanilla
- 1 cup melted white chocolate
- 1 cup sugar
- 1/4 cup cinnamon
- 1/2 cup melted butter
Here is what you do:
- Turn oven on to 350 degrees and get a baking sheet and a rack set up
- in a deep dish mix your cinnamon and sugar together
- in a mixer, add your cream cheese, sour cream, vanilla and slightly cooled melted white chocolate until fluffy and smooth (that’s right no added sugar needed for the filling – Mexican Vanilla is very sweet)
- melt your butter and create a “breading” station with your tortillas, melted butter, rub dish, and the filling
- take a tortilla and add a heaping tbsp of filling towards one side of the tortilla, you will then roll your filling into the tortilla, you are creating a roll (a taquito or a flauta in Spanish) *TIP – use a little of the filling on the far edge to seal the rolled up tortilla
